THE RANGE

Between the Côte de Beaune to the north and the mounts of the Mâconnais in the south, the Côte Chalonnaise vineyards spread along a swath of 30 km by approximately 7 km in width. Here, in the heart of landscapes punctuated by hills in a carefully preserved environment, the vines have found their happy place on the southeast facing hillsides. For over a thousand years vine stocks have grown in soils similar to those of the neighbouring Côte de Beaune and the grapes ripen well here; benefitting from hot summers and dry autumns.
Much of the history of our region is founded in viticulture. Certain wines were enjoyed by the Court of France in the Middle Ages. The wine of Givry, for example, was particularly esteemed by King Henry IV. Cluny monks were also fond of Montagny wines and contributed significantly to the enhancement of the vineyard.

For a long time, the wines of the Côte Chalonnaise, still little known, were marketed under the names of other villages in the Côte de Beaune. Since 1930, and thanks to the implementation of regulations on Appellations d'Origines Contrôlées, our wines have managed to make a name for themselves and are now enjoying growing success.

THE REGIONALS

Burgundy wines are classified in four large categories. On a scale of increasing rarity we have : Regional Appellations, Communal Appellations, Premier Crus and finally, Grand Crus.

The Regional Appellations,, more than half of Burgundy production, comes from the entire Burgundy vineyard or from one of its sub-regions.

Millebuis offers 4 wines in this category. 2 reds: Bourgogne Côte Chalonnaise Pinot Noir (a house speciality), and Côteaux Bourguignons Pinot Noir-Gamay. The 2 white wines are Bourgogne Côte Chalonnaise Chardonnay and Bourgogne Aligoté “Sable” (an oddity).

“LA ROCHE DE CULLES”

Our plots are located in the La Roche de Culles area of ​​the commune of Culles-les-Roches, at an altitude of 330 meters. Facing south/southeast, they draw all the roundness of our Bourgogne Côte Chalonnaise Chardonnay “La Roche de Culles” from the limestone and marl soil. This fresh wine reveals delicate aromas of white flowers and white fruits with toasted nuances. On the palate, this aromatic palette is enhanced by a saline and invigorating hint. The finish is long, imbued with a beautiful minerality. An invitation to enjoy.

The vines of the Bourgogne Côte Chalonnaise appellation are located in islets between the Côte de Beaune to the north and the Mâconnais to the south. Facing east/southeast, they draw from a predominantly limestone clay-limestone soil, shallow and very stony, all the deliciousness that characterizes our Bourgogne Côte Chalonnaise Chardonnay. It evokes yellow-fleshed fruits. The palate is frank, refreshing with a mineral finish. A delicious expression of Chardonnay.

“SABLE”

Spread across various small plots of land in the Côte Chalonnaise, our vines draw from a sandy loam soil all the deliciousness that characterizes our Bourgogne Aligoté “Sable”. Its crystalline color reveals a beautiful citrus nose. The palate is crisp and elegant. A delicious expression of the Aligoté grape variety.

“SILEX”

Our vines are spread across several small plots of land in the Côte Chalonnaise. They draw from the flint soil all the richness that characterizes our Bourgogne Aligoté “Silex.” Produced from flint soil, this pale gold wine reveals a beautiful minerality. The palate is chiseled, fresh, and floral. A delicious expression of the Aligoté grape variety.

LE NATIONAL

Our vines are located in Saint-Gengoux-le-National, on Mont Goubot, at an altitude of 307 meters. Facing south/southeast, they draw from a clay-limestone soil composed of pebbles and white stones all the deliciousness that characterizes our Mâcon Saint Gengoux le National. This wine, with its pale gold color and green highlights, opens with an intense nose of almonds and white flowers. Supple, with lemony notes, the palate offers freshness and roundness. A delicious expression of Chardonnay.

“DOMAINE LES DEMI-HOTTES”

The vineyards of the Bourgogne Côte Chalonnaise appellation are spread out in small islands between Chagny to the north, bordering the Côte de Beaune, and Saint-Gengoux-le-National to the south, bordering the Mâconnais. Located on several small plots in the communes of Saules and Culles-les-Roches, the vines of the “Les Demi-Hottes” climat have an east/southeast exposure, mostly in the middle of the hillside. They draw from the marl and limestone soils, all the richness that characterizes our Bourgogne Côte Chalonnaise “Domaine Les Demi-Hottes.” This wine, with its deep purple color, reveals a beautiful minerality with notes of red fruits and spices. The palate is fruity and crisp with firm flesh. A delicious expression of Pinot Noir.

LE NATIONAL

Our plots are located in the villages of Bissy-sous-Uxelles, Burnand, Champagny-sous-Uxelles, Savigny-sur-Grosne and Saint-Gengoux-le-National. They are south and south-east-facing, and source the characteristic, delicious flavour of our Mâcon Saint Gengoux le National from the chalky-clay soil made up of stones and white rocks.
Deep red in colour with purple hues, this wine reveals beautiful red berry notes. It is smooth on the palate with notes of grenadine, cinnamon and white pepper. A delectable expression of the Gamay grape.

“CLOS DE CHENOVES”

The Clos de Chenôves, located in the eponymous commune in the Côte Chalonnaise region, is one of the oldest clos vineyards in Burgundy. The east-facing Pinot Noir vines cover 3.2 hectares and are located primarily at the top of the hillside. The soil here is very stony, consisting of clay, limestone, and marl. These characteristics make this gem a unique wine. With its intense purple color, this wine opens with a delicate nose of small red cherries. The palate is crisp with a refreshing bouquet of cherry and redcurrant.

“CHAMP CARDIN”

The "Champ Cardin" vineyard, located in the commune of Culles-les-Roches, stretches across a stubble-covered plateau at an altitude of 400 meters. Facing the Levant, the vines draw their inspiration from limestone soil. Its pale gold color reveals a frank nose of linden blossom. Invigorating and elegant, the palate offers a beautifully pure, chalky finish.

“COS DE CHENOVES”

The “Clos de Chenôves,” located in the eponymous commune in the Côte Chalonnaise region, is one of the oldest Burgundy vineyards. The east-facing Chardonnay vines cover 2.6 hectares and are located primarily at the top of the hillside. The soil here is very stony. This pale gold wine opens with a nose of yellow-fleshed fruit (peach, melon). The attack is silky, and the mineral finish offers a beautiful length.

Located in the commune of Chenôves, the vines of our Domaine Vigne de la Dame single-plot selection enjoy east/southeast exposure. They draw from the marl and limestone soils all the richness that characterizes our Bourgogne Côte Chalonnaise Domaine Vigne de la Dame. This wine, with its intense purple color, offers a rich and complex nose where red fruits meet spices, all enhanced by a hint of mint and licorice. The round and smooth palate is supported by velvety tannins.

“LES COURTILLES”

The site, known as “Les Courtilles” (in Old French, this means country garden or enclosure adjoining a house), is located in the commune of Chenôves, adjacent to the hamlet of Filletières, and offers a gentle slope facing east. The Pinot Noir vines extend over 3.20 hectares. They thrive in shallow clay soil. These characteristics make this gem a unique wine. This purple-colored wine opens with notes of fresh red fruits. Beautifully fresh, the palate is crisp with a saline, mouth-watering finish.

THE VILLAGES

Des Communal Appellations are also known as “Appellations Villages” and we have a total of 41 in Burgundy; from Pommard to Nuits-Saint-Georges.
From north to south, the Côte Chalonnaise has 4 Communal Appellations: Rully, Mercurey, Givry and Montagny. Two of these are red wines made from Pinot Noir and two are whites made from Chardonnay, the expression of these Burgundy varieties is recognizable, of course, but with great distinction.

MONTAGNY

Grown on hillsides, the vines bearing the Montagny appellation benefit from the sun early in the day. They source all the vigour that is so typical of our Montagny from brown clay and limestone soils. A luminous white Burgundy with a floral bouquet revealing silkiness in the mouth and flavours of white-fleshed fruit. A very pure expression of Chardonnay.

RULLY

The vines of the Rully appellation are located on hillsides. They draw from very clayey, brown limestone, and quite stony soils all the elegance that characterizes our Rully. Its sparkling color reveals notes of fresh fruit and spicy nuances. Rich in fruit, the palate combines freshness and roundness. A very pure expression of Chardonnay.

GIVRY

Situated between 240 and 280 meters above sea level, the vines of the Givry appellation are exposed east / southeast. They draw from clay-limestone soils and very calcareous subsoils all the generosity that characterizes our Givry. It reveals a nose of ripe red fruits and mousse enhanced by spicy notes. Pulpy, the palate is full of fruit, the tannins are silky. A very pure expression of Pinot Noir.

MERCUREY

The Mercurey appellation's vines are located on hillsides between 230 and 320 meters above sea level. They draw from clay-limestone and marl-limestone soils all the richness that characterizes our Mercurey. It reveals notes of raspberry and cherry with nuances of leather and spice. The palate offers beautiful body and melted tannins. A very pure expression of Pinot Noir.

RULLY

The vines of the Rully appellation are located on hillsides. They draw from very clayey, brown limestone, and quite stony soils all the finesse that characterizes our Rully. Its light ruby ​​color reveals a nose of pomegranate and cranberries with spicy nuances. Elegant and fruity, the palate offers a beautiful structure. A very pure expression of Pinot Noir.

MERCUREY
BIO

The vines face due east on loamy, clayey soil. Its dark red color with purple highlights reveals notes of red fruits and blackcurrant. The palate is intense with melted tannins. A very pure expression of Pinot Noir.

THE PREMIER CRUS AND "CLIMATS"

The Premier Crus are denominations within the Appellations Communales, highly distinctive Climats. The name of this AOC must therefore be followed by the name of a climat classified as Premier Cru. There are 562 Premier Cru climats throughout Burgundy (from Saint-Aubin Premier Cru “Murger des dents de chien” to Santenay Premier Cru “La Comme” and Montagny Premier Cru “Montcuchot”). They constitute the jewel in the crown of our vineyard.

Each Climat in Burgundy is a vineyard plot, officially defined and bearing its own name for hundreds of years. It has its own history and benefits from distinctive geological and climatic conditions. MONTAGNY
“CLOS DU CORBEAU”

“Clos du Corbeau” is a named vineyard plot covering 1.16 hectares in the Montagny appellation, it is situated in the middle of the hillside and faces fully east. The vines source the characteristic purity and intensity of our Montagny “Clos du Corbeau” in limestone-clay soils giving small bunches of golden coloured grapes which are always well-ripened.

“LES CHANIOTS”

“Les Chaniots” is a 12.40 hectare vineyard in the Montagny appellation, classified as a Premier Cru. Facing east/southeast, our vines draw on shallow, stony soil covered in rich black earth, giving them all the elegance and power that characterize our Montagny Premier Cru “Les Chaniots.” It reveals notes of flowers, white and dried fruits. Combining opulence and finesse, the palate offers a mineral finish. A very pure expression of Chardonnay.

“LES COÈRES”

Covering an area of ​​34 hectares, “Les Coères” is the largest of the Montagny appellation’s Premier Cru vineyards. The vines are located on a plateau as well as on slopes facing southeast and north. They draw from the shallow, slightly stony soils of clay, blue marl, and gryphea limestone, all the density and minerality that characterize our Montagny Premier Cru “Les Coères.” It reveals a complex nose of fruit and flowers. The palate is frank, combining aromas of candied quince and almond. A very pure expression of Chardonnay.

“MONTCUCHOT”

Classified as a Premier Cru, “Montcuchot” is a climat in the Montagny appellation. Very steep, its surface area is 12.30 hectares. The vines are located at the top of the slopes and face southeast. They draw from a soil composed of pebbles, limestone and blue clay all the intensity and aromatic richness that characterize our Montagny Premier Cru “Montcuchot”. It evokes fresh fruit. Refreshing, the palate reveals aromas of peach and quince, notes of almond and butter. A very pure expression of Chardonnay.

Our intimate knowledge of the terroirs of the Premiers Crus has allowed us to select certain vineyards to faithfully reflect the identity of the Montagny Premier Cru appellation. Exposed to the rising sun, our vines draw from marl-limestone soils all the minerality that characterizes our Montagny Premier Cru. It reveals a nose of white flowers with menthol notes. Silky, the palate is rich in complex nuances of hazelnut, almond, and honey. A very pure expression of Chardonnay.

GIVRY
1ER CRU

Our intimate knowledge of the Premier Cru terroirs has allowed us to select some of them to faithfully reflect the identity of this appellation. The vines are exposed due east to south/east between 240 and 280 meters above sea level and draw from clay-limestone soils all the elegance that characterizes our Givry 1er Cru. This wine with a purple color reveals aromas typical of Pinot Noir (blackcurrant, morello cherry and leather). Dense and elegant, the palate offers a beautiful aromatic complexity with melted tannins. A very pure expression of Pinot Noir.

MERCUREY
1ER CRU

Our in-depth knowledge of Premier Cru terroirs allows us to make a selection among them in order to faithfully express the soul of the appellation Mercurey 1er Cru. The vines source the complexity that is so typical of this wine in pebbly soils composed of very chalky white marls. Its deeply-coloured depths reveal a bouquet of raspberry and blackberry that evolve to aromas of coffee. In the mouth it is straightforward with powerful tannins. A very pure expression of Pinot Noir.

MONTAGNY 1ER CRU
"VIGNE DU SOLEIL"

Covering an area of ​​4.7 hectares, “Vigne du Soleil” is the sunniest climate in the Montagny 1er Cru appellation. Facing due east, the vines (which we harvest late, seeking overripeness) are located at the bottom of the hillsides, on brown, slightly stony soils. They draw from a clayey, filtering soil all the power and intensity that characterize this wine with its luminous, golden color, revealing a nose of ripe yellow fruits. Sunny and heady, the palate offers aromas of peach, pineapple, mango with spicy nuances.

"CLOS JUS"

“Clos Jus” is a vineyard run by a few winegrowers in the Givry appellation, classified as Premier Cru, with an area of ​​approximately 8 hectares, whose revival dates back to 1990. The soil is composed of light clay and limestone. It has the particularity of being very ferruginous (the soils are dark reddish brown), which gives the wine great character. Intensity and depth characterize this wine, which reveals a complex and delicate nose of fresh grapes and black fruits. The palate offers accents of spices and vanilla with a persistent finish.

"CLOS MARCEAUX"
MONOPOLE

“Clos Marceaux” is a Premier Cru monopoly vineyard covering 2.95 hectares within the Givry appellation; it is situated next to the church in Poncey. The vines are planted in the middle of the slopes and are fully east facing. They source the richness and generosity that is typical of our Givry 1er Cru “Clos Marceaux” from grassed over chalky-clay soils and subsoils rich in limestone.With its rich and generous style, this deeply coloured wine reveals an intense red fruit bouquet alongside mocha. It is convivial, firm and elegant in the mouth with vanilla nuances. A very pure expression of Pinot Noir.

VENDANGES
DE NOVEMBRE

The grapes for this unique vintage come from several small plots in the Côte Chalonnaise region, particularly from the "La Cassine" vineyard on the hills above Saint-Vallerin. The airy microclimate allows for a noble development of the Chardonnay and optimizes the grapes' overripeness. The vines face east and draw from the clay-limestone soil all the voluptuousness that characterizes our November Harvest. This sweet wine, with its luminous golden yellow color, reveals a complex nose of quince, white flowers, and candied fruit. The full-bodied and powerful palate offers beautiful nuances of honey and spices (saffron).

"SAINT-MORILLE"

Covering an area of ​​2 hectares, “Saint Morille” faces due east, facing the rising sun. Its terroir is made up of small, flat, rough stones, with a marl and limestone subsoil, giving its wines structure and freshness. This pale gold wine offers a floral nose, marked by spices and citrus fruits. It is concentrated, fresh and mineral. It offers aromas of toast and flint.

"CLOS L'EVEQUE" BIO

505 / 5 000 The jewel of the appellation, this large clos, “Le Clos l’Évêque” - 1548, belonged to the bishops of Chalon. We have selected this emblematic and typical place of the Mercurey appellation to offer you an exceptional sensory experience. The vines thrive in sandy and light soil at the top of the plot and clay and ochre at the bottom. This wine with an intense ruby ​​color reveals aromas of red and black fruits. The palate is ample, round and fleshy with beautiful elegance and fine tannins.

THE CRÉMANTS

La Côte Chalonnaise is therefore the probable birthplace of Crémant de Bourgogne. In 1822, some wine merchants from Chalon-sur-Saône with vineyards in Rully and Mercurey invited a young winemaker from Champagne to their estates. This initiative resulted in the creation of sparkling white wine in Burgundy, and a thriving tradition… Today our winegrowers cultivate vines specifically for Crémant production (mostly Pinot Noir), the harvest being vinified in our wineries and then transformed into sparkling wine at Caves Bailly Lapierre since 1998.
