Covering a little more than 1,000 hectares, the vineyards cultivated by our 286 winegrower members are located within the main Communal and Regional Appellations of the Côte Chalonnaise.

Our winegrowers are united in their desire to achieve the following:
• Helping people learn about the wealth and diversity of their terroirs,
• maintaining the exceptional natural heritage of the Côte Chalonnaise,
• passing on their careful and precise methods of working the vines.

Millebuis is the manifestation of the commitment of our winegrowers to give their best to their land and to their children. For us, the vines and the resulting wine incarnate a way of life that must be sustained with enthusiasm and boldness.

Since its creation in 1931, the Cave des Vignerons de Buxy has continuously pursued quality across all its appellations, thanks to the dedication of its staff and a sustained investment policy (both technical and human). In 1990, when the INAO officially recognized the Bourgogne Côte Chalonnaise appellation as an AOC, the Cave des Vignerons de Buxy saw its ongoing quest for quality as a recognition. This marked the beginning of the certification and labeling processes, culminating in ISO 9001 certification in 2001. Similarly, its commitment to food safety, wine traceability, and environmental responsibility has led it to enhance its quality management system. It is also BRC (British Retail Consortium) and IFS (International Food Standard) version 6 certified. Finally, in 2011, the winery committed to the “Committed Winegrowers” ​​initiative, formerly known as “Sustainable Winegrowers”. This initiative, built on 37 commitments, rests on 4 pillars: the environment, quality from vine to glass, local heritage, and fair pricing for consumers and producers.

DECISION-MAKING TOOLS

 

Domaine des Demi-Hottes was part of the 30,000-vineyard group supported by the winery from the 2018 to the 2021 vintage. As part of this initiative, one of its vineyards was equipped with a weather station connected to decision support tools for downy and powdery mildew. Based on its positive experience, the winery decided to continue using this system to provide robust support for managing its plant protection treatments, particularly on susceptible plots.

It is a collective of farmers who are moving forward together in the transition to agroecology with low levels of plant protection products in order to move from the experimental stage to a concrete large-scale application.

Decision Support Tools aim to facilitate the integration and analysis of multiple data to determine the best strategy for protecting vines throughout the year.

The Caillot estate has always been a pioneer and curious in soil maintenance management.

In 2019, he embarked on green manure and began by sowing a mixture of hairy vetch, clovers and forage rye.

Objectives: nitrogen enrichment of the soil and high biomass production. All this for diversity and biodiversity!

The next step desired by the estate is to join the Stratagème project led by the BIVB and try hydromulching…

The Côte Chalonnaise is a renowned wine-growing region in Burgundy, located south of the Côte de Beaune. This small vineyard, 40 kilometers long but only 7 kilometers wide, has long been unfairly overshadowed by its neighboring AOC appellations, Côte de Beaune and Côte de Nuits. It produces a wide range of wines with a distinctive character. Our limestone soils are particularly well-suited to the Pinot Noir grape, which remains the dominant variety in this part of Burgundy. However, the plantings on our varied and varied plots also include Chardonnay, Aligoté, and Gamay. As you can see, it is a rich wine-growing region within Burgundy. Drawing on the richness of this terroir and the expertise of our winemakers in viticulture and winemaking, Millebuis is a collection of nuanced Burgundy wines: Montagny, Givry, Mercurey, and Rully. These wines will introduce you to a wide range of aromas, some with finesse, others with bouquet, roundness, freshness, fruity notes, citrus, red, white, and dried fruits, or even floral notes. Indulge in our vintage red and white wines, such as the Montagny 1er Cru, perfect as an aperitif. This white Burgundy, aged in vats or oak barrels, is mineral and fresh, ideal for awakening your palate. For a perfect food and wine pairing with white meats, we recommend a white wine with a bit more body and a beautiful yellow hue: the Montagny 1er Cru “Vigne du Soleil” appellation. And for your desserts, choose from our light and airy Crémant de Bourgogne wines.
